We chose the IGP SICILIA supply chain because it is a quality mark that certifies the origin and territorial identity of the oil.

Each batch is verified and certified by an independent control body, which, through strict and accurate inspections and analyses, guarantees that the olives all come from our farm, that the extraction times are very short and that storage takes place in the absence of oxygen and at a controlled temperature.
Cultivation
We fertilise the soil by shredding only the wild grasses that it itself provides us with.
We irrigate carefully using modern systems that allow us to operate where and only when necessary without wasting a single drop of precious
water.
We prune using the polyconic vase method to follow the natural growth of the plants, which will always be lush and healthy.
Harvest
We carry out an early harvest campaign so that we can extract the highest quality at the expense of quantity. We keep the harvested olives at 4°C throughout the day until they arrive at the mill.
Crushing
Only 10 hours elapse between harvesting and pressing, which is carried out strictly cold and in a continuous process.
Bottling
In our company laboratory, we filter the freshly pressed oil and store it in tanks under nitrogen pressure at a controlled temperature to guarantee you a top-quality product all year round.
